⚙ STUFF YOU’LL NEED
3–4 lb chuck roast (don’t you dare call it Charles)
Fresh rosemary
Fresh thyme
3 bay leaves (tie them together with their herbal friends)
1–2 tbsp CWE Spice
1 cup dry red wine (drinkable quality — you know what I mean)
1 tbsp olive oil
3–5 cups low-sodium beef broth (enough to nearly cover the roast — trust your
gut, you got this)
1 lb small potatoes (optional, but why would you skip them?)
1 medium onion (large works too — we’re not into onion shaming)
4–6 carrots, cut on an angle because presentation matters
1 tbsp tomato paste

⚡ LET'S RIDE
1. Sear the Star.
Preheat that oven to 325°F. Coat your chuck roast in CWE Spice like it’s getting ready for stage time. Both sides. No shortcuts.
2. Bring the Heat.
Drop olive oil in your Dutch oven, medium-low flame. Sear both sides 1–3 min per side until it looks like a crispy backstage leather jacket. Don’t burn it — stay with your instrument.
3. Backstage Break.
Pull Chuck off the stage and set it on a plate to chill.
4. Open the Show.
In the same Dutch oven, toss in chopped onions and carrots. Let them jam in that meat juice for 2–3 min. Add tomato paste and mix until it’s all one big tasty chorus.
5. Wine Solo.
Pour in the red wine. Scrape up all those flavor riffs stuck to the bottom — that’s your encore.
6. The Reunion Tour.
Drop Chuck back in, pour in beef broth till it just kisses the top, add the potato crowd (if invited), plus your herb bundle.
7. Slow Burn.
Let it come to a lazy boil, then move the whole band (Dutch oven and all) into your 325°F oven for 4 hours. Don’t peek. Let the magic happen — they need alone time to get tender.
8. The Big Finale.
Four hours later — open the oven. Pull Chuck out gently like you’re handling a rock legend. Shred it with two forks. It should fall apart with zero resistance.
9. Encore Dip.
Drop that shredded greatness back into the savory wine-broth spa with the veggies. Stir. Taste. Smile.
