You’ve seen them all — sunny side, over-easy, scrambled, hard-boiled — but somehow the humble omelette gets left off the playlist. Why? It’s one of the easiest and most badass ways to load your plate with protein, flavor, and anything else that’s been waiting backstage in your fridge.
Every diner in America has their version, but this one? This is the BT way. Clean, bold, and fully under your command. Once you get this base riff down, you can remix it however you want — veggies, cheese, crab, leftover steak… whatever your creative chaos calls for.
🥁 STUFF YOU’LL NEED
Main Act:
3 eggs
Dash of salt (optional)
1 tbsp butter (real butter only — no counterfeits on this stage)
Support Crew:
1 medium mixing bowl
1 fork (your mixing instrument)
1 8-inch non-stick skillet
1 spatula
⚡ LET'S GET CRACKIN'
1. Prep the stars.
Crack those eggs into your bowl. If you’re new to the game, use a smaller bowl first to avoid the dreaded shell in the bowl moment. If you spot a shell, channel your inner ninja — fish it out gently, push it to the edge, and get it gone. Crunchy omelettes are not a crowd-pleaser.
2. Beat it.
Take your fork and whip those eggs like you mean it. We’re talking full commitment. The goal: no whites, just a smooth, golden mix. There’s probably a scientific reason for this… but who cares? It works.
3. Stage setup.
Heat your skillet on medium-low. Add butter and swirl it around like pyrotechnics on stage — make sure every inch of that pan gets the love.
4. Pour and pause.
Pour in your eggs, then do nothing. Let them set for a 30 seconds then start gently scrambling from the middle out for another 30 seconds and then watch the magic happen. Watch the edges-they will let you know when they are ready to fold as they as you will be able to gently slide your spatula under the sides and push the cooked edges toward the center. Tilt the skillet slightly to let the runny eggs flow into the empty spots. Keep rotating until the center firms up.
5. Time to fold.
Start your fold from the right side — slide the spatula under about a third of the omelette and fold it gently over itself. Let it sit for another 45 seconds or to finish cooking through.
6. The grand finale.
Kill the heat. With plate in your left hand and skillet in your right, hold them at a 45-degree angle toward each other and flip that masterpiece onto the plate so it lands in that perfect folded shape. Boom.
