🥁 STUFF YOU’LL NEED

🍗 Nuggets

4 skinless, boneless chicken filets
3 whole eggs + 1 egg white
2 tbsp pickle juice
Olive oil spray (for baking sheet)
1 cup (or more) nutritional yeast

🌶️ Spice Mix 

1 tbsp black pepper
1 tbsp Creole spice
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp paprika
¼ tsp salt
 
🥄 Dipping Sauce
½ sour pickle
1 jarred fire-roasted red pepper
2 tbsp Dijon or Creole mustard
2 tbsp mayonnaise

⚡ HOW TO ROCK THIS

🔥 For the Nuggets:

  1. Preheat & Prep:
    Heat your oven to 400°F (convection bake) — or fire up the air fryer if that’s your weapon of choice. Spray a baking sheet with olive oil.
  2. Set the Stage:
    Grab 3 bowls:
    • One for your spice mix
    • One for the egg wash (eggs + egg white + pickle juice, whisked together)
    • One for the nutritional yeast
  3. Cut the Tracks:
    Slice the chicken into 2-inch nugget pieces — bite-sized but built to rock.
  4. Coat the Band:
    One at a time, dip each piece in this order:
    👉 Spice mix → 👉 Egg wash → 👉 Nutritional yeast.
    Then line ‘em up on the oiled baking sheet.
  5. Bake to Perfection:
    Cook for 15–18 minutes, until golden and cooked through.
  6. Final Encore:

  1. Toss the pickle, roasted red pepper, mustard, and mayo into a food processor.
